Coconut Bite Banana Bars

A sweet snack to cool off with.

Chewy and chocolaty, it's a must-try tropical treat.

Chilled to perfection and full of banana-infused sweetness, Coconut Bite Banana Bars are a delicious summer snack that's sure to be a hit. Make them the night before your picnic or barbecue and chill for an easy treat with a taste of the tropics.

Crust Ingredients:

Filling Ingredients:

  • 2 overly ripe bananas, smashed
  • 3/4 can sweetened condensed milk
  • 1 cup chopped walnuts
  • 12 chopped Theo Coconut Bites (6 packs)

Instructions:

  1. Preheat oven to 350 degrees F and line a 9x9 inch pan.
  2. In a large microwaveable bowl, add the Theo Bittersweet Baking squares and sugar.
  3. Microwave on 15 second intervals, mixing in between, until chocolate is melted. Do not burn chocolate.
  4. Add the sugar and dash of salt and mix.
  5. Add the flour and mix. The mixture should be relatively thick.
  6. Spread mixture into lined pan and press down with a spoon to fill in spaces.
  7. Bake the crust for 20 minutes.
  8. While the crust is in the oven, mash the bananas in a bowl and add the sweetened condensed milk, mix thoroughly.
  9. Chop the walnuts and Coconut Bites into chunky pieces and mix into the banana mixture.
  10. Take the crust out of the oven and spread the banana mixture over the top.
  11. Bake for another 30 minutes until golden brown on top.
  12. Remove from oven and let cool completely on counter, then move into the fridge to chill overnight.
  13. Cut chilled bars into desired size and enjoy!
