Coconut Bite Banana Bars

A sweet snack to cool off with.
Chewy and chocolaty, it's a must-try tropical treat.
Chilled to perfection and full of banana-infused sweetness, Coconut Bite Banana Bars are a delicious summer snack that's sure to be a hit. Make them the night before your picnic or barbecue and chill for an easy treat with a taste of the tropics.
Crust Ingredients:
- 1/2 cup flour
- 3/4 cup unsalted butter
- 1/2 cup granulated sugar
- 2oz Theo 70% Bittersweet Baking Bar
- Dash of salt
Filling Ingredients:
- 2 overly ripe bananas, smashed
- 3/4 can sweetened condensed milk
- 1 cup chopped walnuts
- 12 chopped Theo Coconut Bites (6 packs)
Instructions:
- Preheat oven to 350 degrees F and line a 9x9 inch pan.
- In a large microwaveable bowl, add the Theo Bittersweet Baking squares and sugar.
- Microwave on 15 second intervals, mixing in between, until chocolate is melted. Do not burn chocolate.
- Add the sugar and dash of salt and mix.
- Add the flour and mix. The mixture should be relatively thick.
- Spread mixture into lined pan and press down with a spoon to fill in spaces.
- Bake the crust for 20 minutes.
- While the crust is in the oven, mash the bananas in a bowl and add the sweetened condensed milk, mix thoroughly.
- Chop the walnuts and Coconut Bites into chunky pieces and mix into the banana mixture.
- Take the crust out of the oven and spread the banana mixture over the top.
- Bake for another 30 minutes until golden brown on top.
- Remove from oven and let cool completely on counter, then move into the fridge to chill overnight.
- Cut chilled bars into desired size and enjoy!
