Cookie Dough Ingredients:

  • 1/2 cup softened unsalted butter
  • 3/4 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 1/4 cup all-purpose flour
  • 1/2 tsp baking powder
  • 1/2 tsp salt

Cinnamon Sugar Ingredients:

  • 1 tbsp granulated sugar
  • 1 1/2 tsp cinnamon

Instructions:

  1. Preheat oven to 375F and line 2 baking sheets with parchment paper or a reusable baking mat.
  2. In a large mixing bowl, use a hand mixer to cream together the butter and sugar for 3-5 minutes.
  3. Add the egg and vanilla extract and use the mixer again until just combined.
  4. Add the flour, baking powder, and salt and mix again until smooth. Use a rubber spatula to integrate any dry ingredients stuck to the bowl.
  5. Use a large cookie scoop or about 3 tbsp of dough to form 8 roughly equal-sized cookies.
  6. In a shallow bowl, make your cinnamon sugar by combining the granulated sugar and cinnamon with a whisk or fork.
  7. One at a time, roll the cookie dough balls in the cinnamon sugar until they are completely coated on the outside. Line them up on the cookie sheets, leaving about 2 inches of space between each cookie.
  8. Bake on the top rack for 12 minutes. Remove from the oven and sprinkle on some of the leftover cinnamon sugar.
  9. While your cookies are cooling, add your chocolate and coconut oil to a saucepan over medium heat, stirring continuously until the chocolate is melted and smooth.
  10. Dunk the cookies into the chocolate, one at a time, so that each cookie is half coated in a smooth layer of chocolate.
  11. Set on wax paper or parchment to firm up. Enjoy!
