Favourite product: 4pc scotch collection - I love a good single malt and each of these confections is a treat.

"What do you love most about your job at Theo?"

The people I work with and knowing that I will never have a dull or boring day.  Theo is a group of talented and dedicated people.  Every day brings a new challenge and even during the most difficult days I can always count on my Theo family to lift me up.  And of course telling people where I work always makes for great conversation.

"What inspires you?"

My wife.  I am always impressed with what she does and how hard she works.

"What’s something people would be surprised to know about you?"

I thought about rowing for the US national team after college.  I really enjoyed the sport but the time commitment would have really have been tough.

"What food would you drive all day for?"

A good croissant, a baguette and a nice hunk of cheese from a small town in France where my wife and I spent part of our honeymoon.

"What’s the most surprising thing you’ve learned about chocolate while working at Theo?"

Truly good chocolate is like a great glass of wine.  You can taste all the subtle nuances in every bite.  We take ingredients that are so simple and natural and make something so exquisite.

"What’s your earliest chocolate memory?"

Spending Christmas break with my family in Denmark when I was young.  Between Christmas and New Years there was always a party each night and my sister and I would eat ourselves sick with all the different choices of chocolates, sweets, and baked goodies.

"What’s your favorite eco-tip?"

We take our old newspapers and lay them down under a layer of mulch.  This really helps keep the weeds down and will slowly compost into the soil.  Any weeds that do pop up are easy to pull out.
